Roasted Beet Hummus With Baked Falafel
In honor of International Hummus Day, I wanted to share an easy recipe for roasted beet hummus with baked falafel. There was a time when beets were to be one of my least favorite vegetables. I started including them in my diet to increase my fiber consumption a few years ago and have come to really enjoy them.
This is a quick and easy recipe you can prepare for lunch or dinner. It has been my go-to recipe for all the days I want a light meal that does not make me feel uncomfortably stuffed. It’s also a great vegan option.
Here is what you need to make this Roasted Beet Hummus With Baked Falafel:
Serving Size :
Two to Three
Ingredients:
Hummus:
2 Beets
1 Garlic clove
3 Tbsp of Tahini
1/2 Tbsp of Salt
2 Tbsp of Lemon
1 Tbsp Coriander
1/2 Cups of Water
Falafel:
Tarazi Falafel Mix
3/4 Cups of Water
Garnish:
Tomatos
Cilantro
Instructions:
Mix a cup of falafel with 3/4 cups of water and set aside for thirty minutes. When your mix is ready, preheat oven to 400 degrees Fahrenheit. Spray a baking sheet with oil, form small round balls by hand and set each roll on the sheet. Bake for 30 minutes.

2. Chop your beets into small cubes, set on a baking sheet, and bake on 400 degrees Fahrenheit for 30 minutes. I like to do this simultaneously with my falafel so I don’t have to wait for another 30 minutes.
3. In a blender or food processor add your roasted beets, garlic clove, tahini, lemon, salt, olive oil, and cumin. Add a portion of your cup of water to begin and add more as you go until a creamy texture is achieved.
4. Serve your beet hummus with baked falafel. Add any desired garnish-I like to add some tomato and cilantro.
This roasted beet hummus can be served with falafel, as a dip for pita chips, a spread on wraps, or tossed in a salad.
For a salad, my favorite combination is arugula, tomato, pomegranate, a few scoops of beet hummus, olive oil, falafel and feta.
